No Added Hormones
With such an emphasis on genetics at the ranch we are selecting cattle that are naturally efficient in converting feed and grass to beef, as well as cattle that naturally produce large high marbling steaks. The picture to the right is ultrasound day on the ranch where we ultrasound the breeding bulls to measure the size of their ribeye and the amount of marbling. This process along with analyzing DNA samples allows us the ability to select high quality genetics so we do not have to use added growth hormones
Tender Cut
Our beef is butchered and aged in a way that studies prove increases tenderness by 30-35%. This is done by strategically separating the vertebrate and cutting connective tissue while the carcass is hanging. This allows the weight of the carcass to hang on the loin muscle that makes up most of your steaks, causing it to stretch and create a more tender eating experience. The carcass then hangs in a cooler for 10-13 days as it ages, increasing flavor and adding more tenderness. This exceeds the standard aging period of only 48 hours.
Antibiotics and Vaccines
Raising cattle from birth to finish and keeping them healthy takes a few tools. As a calf grows up and gets mixed with other calves from different pastures they sometimes get sick similar to how when we were growing up and going to school we were more prone to getting sick. We use a few different vaccines recommended by our veterinarian to help prevent as much illness as possible. Unfortunately, we still are not able to prevent all illnesses which is why we continue to use antibiotics on an as needed, case by case basis. Each antibiotic has what is called a withdrawl period, meaning we wait a specified number of days before harvest to make sure all antibiotics are out of the animal's system. This helps us insure your beef is free of any antibiotics or vaccines.
Animal Care
Learning how to care for animals has been passed down through generations in our family. We have been taught from a young age how to calmly move cattle and provide them a minimal stress environment. The cattle are the backbone of our ranch so we know if we take care of them the will take care of us. Our family has also completed the Beef Quality Assurance (BQA) training which focuses on proper handling, treatment, and nutrition for cattle. One of our more recent events on the ranch was a low stress cattle handling demonstration where Curt Pate came and did a short class and live demonstration for us and area ranchers.
